This time of the year can be a little ho-hum. Christmas is over, the gifts have been opened, the tree is starting to die, and we’ve just returned to the gym to try and lose some of the pounds that we’ve piled over the holiday.
With our leftovers dwindling fast, we needed a little pick-me-up, just before we get back into the groove of healthy eating. We just had to fit in one last extravagance. One little weakness. And what’s better than chocolate? Triple chocolate!
Years ago we discovered a fantastic recipe, Nigella Lawson’s Totally Chocolate Chocolate Chip Cookies. These things are absolutely addictive, and pretty easy to make. And, we’ve often followed Nigella’s recommendations to freeze some of them before baking, and then bake when you feel like a fresh cookie. Add some tart frozen yogurt on the side and it’s a fantastic and easy dessert.
Today we decided to whip up a batch and bake it all, just because we’re feeling a little indulgent. We tweaked the recipe slightly, reducing the chocolate chips by a third and replacing them with hazelnuts. Because hazelnuts are just amazing, and when mixed with chocolate a match made in heaven.
We hope that they’ll make it until Thursday, although somehow we doubt it.
